
I have been craving pecan pie. I was going to homemake the pie crust but then I chickened out. I just bought the new kitchenaid 600 stand professional mixer in pewter. It is so cool, I would call it powertools for the kitchen.
Southern Pecan Pie
1 3/4 pecan halves
3/4 cups dark corn syrup
1/2 cup packed dark brown sugar
4 tablespoons butter or margarine, melted
1 teaspoon vanilla extract
3 large eggs
Preheat oven to 350
Coursely chop 1 cup pecans; reserve remaining pecal halves
In a large bowl, with wire shisk, mix corn syrup, brown sugar, melted butter, vanilla, and eggs until blended. Stir in chopped pecans and pecan halves.
Pour filling into pie crust. Bake 45 to 50 minutes, until edges of filling are set (center will jiggle slightly).
